In our opinion , Jean Vesselle's Oeil de Perdrix is one of the best things the small Champagne house can do.
Oeil de Perdrix can be translated as "Partridge's Eye". The name comes from the Champagne's faint pink color, which resembles the color of a partridge's eye at the moment before the hunter gets a shot at it.
The color is also a result of the treatment of the grapes during the harvest, where the must that will later become Champagne takes a little color from the skin of the grapes - Oeil de Perdrix is also a so-called Blanc de Noirs Champagne , which means that it is made from 100% Pinot Noir grapes.
