Fidora Prosecco is the sparkling wine served at the most Michelin restaurants in Italy!

Prosecco Spumante Brut is made 100% from Glera grown on the Civranetta estate on the historic 'Via Annia' (near Laguna di Venezia), where Fidora has been growing wine for more than 100 years.

It was Benedictine monks who converted part of the forest into agriculture in the 14th century. Fidora converted the cultivation of the 80 ha. vineyards to organic in 1974. The remaining 80 ha. on the property is covered by forest, scrub, meadows and ponds, which ensures perfect biodiversity. The influence of the sea and cool winds from the northwestern mountains ensures a large temperature change between day and night. This gives the grapes a slower ripening, but in return good aroma, bite and finesse.

Immediately after harvest, the grapes are gently crushed and given a short maceration with the skins before being pressed. The must then undergoes 8 weeks of cool fermentation in stainless steel pressure tanks (Charmat method), during which it becomes sparkling. It is bottled immediately afterwards.

The wine has a beautiful, light golden color and lively, persistent bubbles. The aroma is immediate, fresh and delicious with nuances of wild flowers, almonds, green apples, grapes and peaches. In the mouth it is fresh and intense, with a good balance between the structure and the fruit sweetness (7-8 g/l. residual sugar). Use it as an aperitif or with Asian-inspired seafood or poultry dishes. Perfect for a small glass in the 'out of time'.
