Champagne Michel Vallez was created by Michel Dervin, who hails from Champagne and from an early age dreamed of becoming a winegrower to produce his own cuvées. In 1983, his dream came true when he created Champagne Michel Dervin. He started with a small plot of vines that he developed over the years to become a vineyard with an area of 7.80 hectares in the village of Cuchery located on the edge of a small tributary of the Marne with a breathtaking view of the hills. The cuvées are the fruit of the terroir located in the heart of the Marne Valley, where the main grape variety is Meunier. The house's Blanc de Noirs, Rosé and Millésime find their special character in a blend made up exclusively of black grapes with white juice, Pinot Noir and Meunier.
The grapes are harvested by hand and slowly pressed. Fermentation and stabilization of the wine takes place in stainless steel tanks with temperature control to ensure the finished champagne's finesse and aromatic complexity. Malolactic fermentation is not carried out in order to best preserve the grapes' natural acidity. The cellar has a constant temperature, which is protected from light. The champagnes are aged longer than the regulations prescribe (approximately 36 months).
Michel Vallez is synonymous with lively, fresh and honest champagne.
