The wine has a classic “cool climate” style with aromas of chamomile and lime blossom, citrus peel, peaches and a bit of ginger. The taste immediately reveals notes of citrus fruits and flowers, but more exotic (yet quite delicate) nuances of hazelnuts, cinnamon, crème brûlée and white pepper also develop. The wine ends with a very long and delicate, fresh aroma. Serve it with seafood and fish or with white meat. Also try it with salads with goat cheese or with cheese gratin dishes.
The Chardonnay grapes (Clones Dijon 76 and 95) for this Reserve come partly from a small parcel in the southwest corner of the organically grown Johnson Vineyard in the Yamhill-Carlton AVA, and partly from the organically grown Chesnut Hill Vineyard in the Chehalem Mountain AVA, both sub-districts of the Willamette Valley. The two very different soil types – sedimentary soil for Johnson Vineyard and volcanic soil at 275 m above sea level for Chesnut Hill – allow for good composition and harmony.
The grapes are pressed whole bunches immediately after arrival at the cellar, and the must is 100% fermented in wooden barrels with the grapes' own wild yeast. After a malolactic fermentation, the wine is matured "on lees" for 15 months in French wooden barrels (228 l., 25% new). The bottling takes place after the wines from the two vineyards are blended with a natural sedimentation, and without filtration. The wine is certified organic by "Oregon Tilth"/OTCO.
