The grapes (50% Sangiovese and 50% Merlot) for this Rosso Passo Collezione are sourced from Lenotti's vineyards in various districts east of Lake Garda. All the plots are planted using the "espalier" or "guyot" system, which ensures the grapes a perfect ripening. The wine is made using the classic "ripassato" technique, where at the end of the fermentation of the dried grapes for Amarone or Recioto, some of the best Veneto wines are poured onto the pressed skins and a new fermentation is started. Finally, the wine is aged for a few months in large, classic "botti" barrels, to add more fatness and complexity.
Rosso Passo Collezione in Botte has a beautiful, glossy, ruby red color. The aroma is fruity and immediate with sweet fruit nuances but also with a good freshness and a good bite. The taste of the wine is also quite open and velvety, with notes of cherry, raspberry and plum, and a quite good structure. The aftertaste is fresh and harmonious, with a good balance between the fruity style, the meatiness and the spices. A delicate woody character emerges in this classic and full-bodied, semi-dry Veneto red wine.
Serve it with stewed vegetable dishes, pasta, risotto, grilled meat (poultry, pork, lamb), wild game or white cheese.
