This Barbera is distinguished by a deep ruby red color. The aroma is dense with ripe red cherries and vanilla.
In the mouth, there is a light acidity, with discreet notes of violets. There are soft tannins with good integration of the oak from the barrel, a nice complexity and a long cherry-driven finish.
Drink it with antipasti, hearty salads, grilled vegetables, spicy soups, pasta or light meat.
The grapes for this Barbera come from 3 vineyards, located in Monforte, La Morra, Castiglione Falletto and a few other small villages in the Langhe.
The vines are 25 - 40 years old and planted in a soil of lime and clay.
The first fermentation takes place over 2 weeks, with daily remontage (pumping the wine at the bottom of the vat, up to the top).
The malolactic fermentation takes place in steel tanks, after which the aging process can begin; several aging methods are used, with both small barriques, large wooden barrels and steel tanks over a period of 12 months.
