When Charles Rolls from Plymouth Gin and Tim Warrilow, who had a background in the food industry, met at a tonic tasting, they were surprised and disappointed by how many tonics were made with cheap flavoring substitutes, artificial sweeteners and preservatives.

This was the beginning of a journey that developed into a treasure hunt in search of the best gin, involving visits to the British Library and recipes dating back to 1620.

After numerous travels and tastings, the Cinchona tree was chosen as the best ingredient as the tree has the highest content of the substance Quinine, an important ingredient in tonic - the Cinchona tree is called Fever Tree by the locals - and the beginning of the Fever Tree adventure had begun.
