It is clear to taste all the varieties in the Two Vines series that they are magnificent examples of the characteristics and authenticity of the grapes.
The Two Vines series are all mono-varietal varieties from the Columbia Valley. The area is dry, as the Cascade mountain range, with mountains reaching over 4,000 meters high, stops the progress of wet weather systems to the east, so drip irrigation is used.
The soil is not very fertile and does not hold water well, so drip irrigation provides optimal control over the growth patterns of the vines. The vinification takes place by destemming and crushing the grapes, but with 10% whole berries to provide more concentration via the grape skins. The wine then ferments and macerates with the grape skins for 6-10 days.
The wine is then aged half in stainless steel tanks and half in a mixture of French and American oak barrels for 14 months.
