The wine that has truly made Allegrini known throughout the world; Palazzo Della Torre - named after the vineyard that surrounds Allegrini's Villa della Torre and a frontrunner for Allegrini's special technique, which uses double fermentation.
The taste is elegant and well-balanced, with a good structure and aroma. The color is ruby red with a hint of purple at the edge. The aroma and taste offer light hints of raisins, sophisticated touches of vanilla, black pepper, clover and cinnamon. It has a long, velvety finish with soft tannins.
Palazzo della Torre is produced using a double fermentation process. Most of the grapes are vinified immediately after harvest, while the rest are dried. In January, the wine that has already been produced is mixed with the dried grapes and undergoes its second fermentation, after which it is aged in French oak barrels for 15 months.
The aging continues for another 2 months in small barrels, after which Palazzo della Torre rests for 7 months in bottle before release.
Try it for:
Allegrini's Palazzo della Torre is excellent with Risotto with mushrooms and saffron, the traditional pasta dishes Amatriciana and Carbonara or with ham. Also try it with Italian cheeses such as Parmigiano Reggiano or Monte Veronese.
Serve it in large glasses a few degrees below room temperature and let it air out for 1 hour before serving.
