Edouard Delaunay sources the grapes for his Nuits-Saint-Georges “Vieilles Vignes” from 3 different plots, all of which are located at the foot of the slope, both north and south of the town itself.
Since the soil varies greatly in the municipality, the grapes are fermented separately with their own yeast cells, resulting in 3 very different wines, which are blended together to achieve the right harmony between finesse, structure, fruity sweetness and minerality.
The blend is matured for 15-18 months in classic Burgundy barrels (228 l., 30% new). Production is approx. 3,200 fl. (2017).
The subsoil of the three parcels, which varies between a predominance of lime and marl to the north and limestone and marble to the south, brings open, delicate aromas of cherry stone, licorice and violets to the nose, and a fruity, velvety and deep style in the mouth.
It finishes with good minerality (including salt), finesse, freshness and tannin. It already gives off a lot in its youth, but will undoubtedly be able to be stored for a while. Try it with, for example, game birds, duck, lamb and veal. Also suitable for white or red mold cheese.
