The wine is made from Negroamaro grapes from plots in Salento, which are located approx. 100 m. above sea level, and where the subsoil mostly consists of clay, limestone and sand. The grapes are harvested at optimal ripeness, usually in mid-September. Fermentation takes place in temperature-controlled steel tanks, and after a gentle pressing, the wine undergoes malolactic fermentation. Finally, the wine matures for 4-6 months in French wooden barrels.
Negroamaro “Talò” has a dark, ruby red color with a purple tinge. The wine is very aromatic in the nose with notes of cherry, blackcurrant and plum as well as slightly spicy nuances of bitter chocolate and licorice. The same notes also appear in the taste, which is quite immediate and fruity and ends with spicy notes. A classic Negroamaro from Alento, rounded and harmonious. Very well-made wine. It will go well with vegetable dishes, with beef, lamb or game. Also try it with mature white or red mold cheeses.
