The wine is made from 100% Spätburgunder grapes (one of the oldest grape varieties in Germany) from various small plots on the estate around Bermersheim. The vines are between 20 and 25 years old and grow on a subsoil of primarily loess and lime, which is excellent for Spätburgunder. A so-called “green harvest” is carried out to remove the poorly developed bunches in July, and the leaves around the grapes are removed in mid-August to increase exposure to the sun. All this in order to harvest optimally ripe and healthy grapes.

After destemming, the grapes ferment for about 3 weeks in open wooden fermentation vats, and after pressing, the wine undergoes malolactic fermentation, also in wooden barrels and without prior filtration. Finally, the wine matures for 12 months in large, traditional wooden barrels. It is bottled after natural settling and light filtration.
