Clos de la Roche is the area's largest Grand Cru vineyard (approx. 16 ha.) and also the most famous. It produces Morey-Saint-Denis' most powerful wines, which is mainly due to the hard, brown limestone soil that is difficult to work in. Jean-Claude Boisset's plot is planted with vines over 60 years old, which give a small yield but at the same time wines that have the classic intense and concentrated style of the vineyard.
The wine is fermented with the grapes' own yeast cells in classic, open wooden fermentation vats, with frequent stirring. It matures for 14-18 months in wooden barrels (228 l.), of which 30-70% are new. The wine is bottled without prior clarification and with a light filtration.
Both in the aroma and in the taste you will clearly find what is the essence of a Grand Cru in Burgundy, namely a mixture of power and fullness and at the same time great finesse. The wood character is incredibly well integrated into the wine and at the same time brings a very nice exotic character, which matches the spicy nuances of dark berries. The wine has a great maturation potential. Serve it with game, for example. with pheasant or deer, with veal fillet or with strong cheeses.
