The Pinot Noir grapes for this wine come exclusively from the Grillenhügel ('Steamer Hill') vineyard, between Guntramsdorf and Mödling, east of Gumpoldskirchen.

The vineyard is located at an altitude of approximately 260-300 m. on a subsoil dominated by deposits of lime, clay and sand. The vines are approximately 25 years old and consist of various clones of French, German and Austrian Pinot Noir.

After destemming and gentle crushing, the must is transferred to large wooden barrels, where fermentation begins spontaneously with the grapes' own yeast cells. Fermentation lasts for approximately 18 days - a slow process that provides an optimal color, aroma and flavor extract. The wine is then transferred to wooden barrels of various sizes (225, 300 and 500 l., French oak, 60% new), where it matures for 14-16 months.

Pinot Noir 'Grillenhügel' has a beautiful, glossy, dark, ruby ​​red color. Despite the high proportion of new barrels, the wood character is beautifully integrated into the wine, which is extremely intense and concentrated. Here you will find complex notes of raspberry, cherry and plum, but also mineral and spicy nuances of pepper, licorice and bitter chocolate. Suitable for veal, game birds, beef and lamb. It can be slightly aerated in the carafe and should be served in large Burgundy glasses.
