The Pinot Noir grapes for this wine come primarily from the vineyards around the village of Tattendorf, where the highly mineral soil (pebbles, lime, sand, clay) is perfect for red grapes, not least Pinot Noir and St. Laurent.
A small portion of the grapes are sourced from younger vines in Gumpoldskirchen near the Anninger mountain, where various clones of French, German and Austrian Pinot Noir are grown between Guntramsdorf and Mödling. After destemming and gentle crushing, the grapes are subjected to a short, cool skin maceration to optimize the color, aroma and flavor extract. The wine is then transferred to wooden barrels, where fermentation takes place, and where the wine matures for about 9-10 months in a combination of large wooden barrels (1,000-3,000 l.) and used barriques (225 l.).
This Pinot Noir has a beautiful, dark, ruby ​​red color. The aroma reveals elegant notes of raspberry, red cherry (cherry stone), but also wilder nuances of wild strawberry and lingonberry.
The taste is fruity and immediate at first, but develops in the glass towards more crispness and depth, combined with mild spices and a more rounded tannin at the end. Serve with pork, veal, game birds, pasta dishes, risotto and similar dishes.
