Estate Pinot Noir is made from grapes from the Lower and Upper Wairau Valley, where grapes with both body and a unique aroma and fruit character can be produced. The grapes are handpicked individually from each plot, as they often reach optimal ripeness at different times, and the entire vinification also takes place separately. After destemming and a light crush, the grapes are fermented in open vats with continuous stirring. The wine is gently pressed and matured for 10 months in wooden barrels.
Estate Pinot Noir is very crisp and aromatic, with nuances of wild roses, herbs, violets, black cherries and a touch of vanilla as well as a touch of wood from the barrels. The immediacy, fruitiness, bite and velvety of the wine already make it very charming and harmonious in its youth, but it also has enough fruit and tannin to mature for 3-5 years. A very precise and crisp aftertaste makes it incredibly charming. Serve it with pasta, risotto, poultry, pork, lamb and warm vegetarian dishes as well as grilled fish.
