Sancerre from Jean-Paul Balland has a beautiful, brilliant color with a greenish tinge. The aroma reveals nuances of grapefruit and white peaches. The wine's class is particularly revealed in the taste, which is dry, very full-bodied but at the same time very fruity, characterized by freshness and finesse with a delicate nuance of citrus fruits, elderberry and almonds in the aftertaste. Overall, a very harmonious and stylish wine.
Sancerre should generally be drunk relatively young (3-4 years), but a wine of Jean-Paul Balland's class can easily be stored for longer. In some of the strong vintages, it actually benefits from a few months of aging after bottling before reaching its full harmony, and it is worth waiting for. It is an excellent companion to most seafood and fish dishes. In the area, the white Sancerre is also used as an accompaniment to the district's famous goat cheese: Crottin de Chavignol.
The Sauvignon grapes for this wine are harvested on 17.2 hectares of vineyards, 3/4 of which come from the so-called "Caillottes" soil and 1/4 from the "Terres Blanches". The " Caillottes" consist of gravel and limestone and produce very delicate wines, and the white "Terres Blanches" consist of clay and chalk, which produce stronger wines.
The grapes are destemmed and pressed immediately after picking. The wine is fermented with its own yeast culture in temperature-controlled steel tanks and then matured on its "lie" (leakage) before being bottled in May after the harvest.
