Langhe Nebbiolo “Perbacco” is made from 100% Nebbiolo, both from plots in Barolo and in Barbaresco. The vinification takes place separately for each plot. Fermentation lasts for approx. 4-5 weeks and takes place in steel tanks. Then a smaller part of the wines is moved to French barriques and a larger part to large, Slavonian wooden barrels, where the malolactic fermentation and maturation begin.
During the maturation, a selection of the wines from Barolo is made: some are best suited for the “Perbacco” cuvée, others are used in Vietti’s Barolo “Castiglione”. The maturation then continues, lasting a total of 2 years. The blending is carried out in large steel tanks immediately before bottling.
The wine has a beautiful, glossy, ruby red color. The nose is very open and complex with notes of spearmint, violets and delicate red fruits as well as more spicy nuances of English liquorice and pepper. All these notes come through in the taste, which is very deep and structured. The wine has good cellaring potential with nice, rounded tannins in the aftertaste.
A super Nebbiolo that will definitely gain in complexity and elegance with a little aging. Serve it with dishes with veal, lamb, beef or game, for example. Also goes well with mature white mold cheeses.
