The Pinot Noir grapes for Jean-Baptiste Jessiaumes Volnay are harvested on a 0.5 ha plot with the district's classic clay and calcareous subsoil and with fantastic sun exposure. The harvest is done manually and the bunches are further selected upon arrival at the cellar. After 100% destemming and gentle crushing, the grapes undergo a cool maceration for 6-8 days before the temperature is raised and fermentation begins spontaneously with the grapes' own yeast. It lasts for about 30 days and is followed by a malolactic fermentation. The wine is then aged for 15 months, of which 12 months in classic 228 l Burgundy barrels (10% new).
The wine has a light, ruby red color. In the aroma, it is particularly delicate and feminine tones that emerge. Here you first find juicy tones of cherry, pomegranate, wild strawberry and mild spices. The style develops towards the darker in the glass, and the wine quickly acquires a delicious harmony between fruitiness and velvet. It ends with good body, complexity and elegance. A classic, young Volnay (2019 tasted Sept. 21), which will undoubtedly grow with the years, but already gives off a lot. Serve it with the best gastronomic creations with game birds, rabbit, veal and pork.
